Stir-Fried Celery (炒芹菜)

Ingredients

  • Celery
  • Sugar (1 tsp)
  • Cooking oil (about 1 tablespoon)
  • Garlic (2 cloves, minced)
  • Ginger (2 slices)
  • Oyster sauce (1 tablespoon)
  • Fish sauce (1 tsp) (I replace with fruit vinegar sometimes)
  • Salt (a pinch)
  • Toasted sesame seeds (for garnish)

Instructions

Prepare the Celery

  1. Cut off and discard the bottom of the celery.
  2. Remove the leaves (you can keep them for salads or soups).
  3. Cut the celery stalks in half, then wash them under running water, wiping off any dirt.
  4. Use a peeler to remove the fibrous parts on top of the celery.
  5. Cut the celery diagonally into smaller pieces for easier stir-frying.

Blanch the Celery

  1. Boil water in a wok.
  2. Add the celery and blanch for about 1 minute. This slightly cooks the celery.
  3. Add 1 tsp of sugar during blanching to enhance the celery’s sweetness.
  4. Remove the celery from the water and set it aside.

Stir-Fry

  1. Heat the wok again and add about 1 tablespoon of cooking oil.
  2. Add the minced garlic and ginger slices, cooking on medium to low heat to release their aromas.
  3. Increase to high heat, add the blanched celery, and stir-fry for 30 seconds to 1 minute.
  4. Reduce to low heat and add 1 tablespoon of oyster sauce, 1 tsp of fish sauce, and a pinch of salt. Stir these on the side of the wok to release their aromas.
  5. Turn the heat back to high and quickly stir-fry everything for another 30 seconds to combine.

Serve

  1. Transfer the stir-fried celery to a serving plate.
  2. Garnish with toasted sesame seeds.

  • 轉高火,快速炒製30秒,使味道融合。

上菜

  • 將炒好的芹菜轉移到盤子上。
  • 用烤芝麻裝飾。
