Sugar Cream Pie (糖霜奶油派)

Ingredients

Crust

  • 1½ cups flour*
  • ½ cup oil
  • 2 tbsp sugar
  • ½ tsp salt
  • 2 tbsp milk

Pie

  • 1 stick margarine (or butter)
  • 2 cups milk
  • 1 cup sugar
  • 4 tbsp corn starch
  • 2 tsp vanilla
  • Cinnamon sugar

Instructions

Crust

  1. Mix ingredients together and form into a ball.
  2. Press into a 9-inch pie pan. Do not prick.
  3. Bake at 400° until golden brown.

Pie

  1. In a sauce pan, heat the margarine and the milk until the margarine is melted.
  2. Mix the sugar and corn starch together and then add to the milk & margarine and bring to a medium heat. Stir until it is thick and creamy. Stir in the vanilla
  3. Pour into the baked pie shell (crust) and sprinkle with cinnamon.
  4. Bake at 375° for 15-20 minutes or until golden brown. Remove from oven and allow it to come to room temperature before refrigerating for at least an hour to set.

*If not using self-rising flour, for every 1 cup of all-purpose flour, add 1½ tsp of baking powder and ¼ tsp fine salt
